Eating whole animals, nose-to-tail, was a way of life for humans for the majority of our existence up until recent history. In the past people believed that consuming the organ of a healthy animal would strengthen and enhance the health of their own corresponding organ. Interestingly, this is just now being explored by science. The hypothesis is that when eaten, organs and glands selectively travel to the corresponding organs of the consumer in high concentrations. Therefore in theory when the liver is consumed, the unique vitamins, minerals and enzymes within it, which are key for liver health and function, travel to your own liver.

Indigenous people also appreciated that animals gave their lives to ensure us as humans could survive and thrive so they left nothing go to waste.
